The small, lush leaves on tender trailing stems can be used instead of Spinach and treated in much the same way. Great in Quiches, stir-fries and as a steamed vegetable. The whole stem with small leaves is particularly good in Tempura batter. Barilla is a semi-prostrate rambling plant is found on South Eastern Australian dune systems and protected gullies under low trees in the first line of vegetation from the beach. The small leaves are covered in swollen water storage cells and were a valued green vegetable for Indigenous communities. Also known as Coorong Spinach, Barilla is related to Warrigal Greens but has a more petite form and a fresh delicate flavour profile.
